Rocket
Synonym: Arugula
Rocket (Eruca sativa) is an edible plant from the family Brassicaceae originated in the Mediterranean region whose leaves are used as salad or spice.
The spicy flavor is attributed to the glucosinolates and their metabolites (isothiocyanates). Rocket loves moist soil in sunny places and can be sown from April onwards and harvested until autumn.
In addition to the ingredients listed below, rocket can have a high nitrate content, especially under excessive fertilization.
Rocket can be served as salad, appetizer, along with tomatoes and quark or as pesto.
